  • 1.5 pounds chicken breasts boneless and skinless
  • 2 cans great northern beans drained and rinsed, 15 oz each
  • 1 pound green chilies diced, 4 oz can
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano dried
  • 1 teaspoon chili powder
  • 4 cups chicken broth low sodium
  • 1 cup sour cream for garnish
  • 1 cup shredded cheese cheddar or Monterey Jack, for garnish
  • 0.25 cup fresh cilantro chopped, for garnish

Instructions

Preparation Steps

  • Place the chicken breasts at the bottom of the slow cooker.
  • Add the beans, green chilies, onion, and garlic on top of the chicken.
  • Sprinkle cumin, oregano, and chili powder over the mixture.
  • Pour the chicken broth over all the ingredients in the slow cooker.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken using two forks.
  • Serve hot, garnished with sour cream, shredded cheese, and cilantro.

Notes

If the chili is too thick, add extra chicken broth to reach your desired consistency.
