  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup apple juice
  • 1 cup chicken broth low sodium
  • 0.5 cup honey
  • 2 tablespoons Dijon mustard
  • 2 whole apples cored and sliced
  • 0.5 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 1 sprig rosemary fresh

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 8 minutes.
  • Remove pork loin from skillet and place it in the slow cooker.
  • In a bowl, mix together apple juice, chicken broth, honey, Dijon mustard, minced garlic, salt, and pepper.
  • Pour the mixture over the pork loin in the slow cooker.
  • Arrange apple slices around the pork loin and add the rosemary sprig.
  • Cover and cook on low for 8 hours, or until the pork is tender.
  • Once cooked, remove the pork and let it rest for a few minutes before slicing. Serve with the apples and the cooking juices.
