Preparation Steps
Heat olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 8 minutes.
Remove pork loin from skillet and place it in the slow cooker.
In a bowl, mix together apple juice, chicken broth, honey, Dijon mustard, minced garlic, salt, and pepper.
Pour the mixture over the pork loin in the slow cooker.
Arrange apple slices around the pork loin and add the rosemary sprig.
Cover and cook on low for 8 hours, or until the pork is tender.
Once cooked, remove the pork and let it rest for a few minutes before slicing. Serve with the apples and the cooking juices.
