Instructions
Preparation Steps
In a large skillet over medium-high heat, brown the beef stew meat in olive oil. Transfer the beef to the slow cooker.
Add the beef broth and red wine to the slow cooker, then stir in the carrots, potatoes, onion, and garlic.
Mix in the tomato paste, thyme, rosemary, salt, black pepper, and bay leaf.
Cover and cook on low for 8 hours, or until the beef and vegetables are tender.
Remove the bay leaf before serving and adjust seasoning if needed.
Notes
You can serve this stew with warm bread or over rice for a complete meal. Adjust the thickness of the stew by adding more beef broth if needed.
