  • 2.5 lb beef stew meat cut into 1-inch cubes
  • 2 tbsp olive oil for browning
  • 4 cups beef broth
  • 1 cup red wine optional
  • 3 carrots sliced
  • 3 potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 1 bay leaf

Preparation Steps

  • In a large skillet over medium-high heat, brown the beef stew meat in olive oil. Transfer the beef to the slow cooker.
  • Add the beef broth and red wine to the slow cooker, then stir in the carrots, potatoes, onion, and garlic.
  • Mix in the tomato paste, thyme, rosemary, salt, black pepper, and bay leaf.
  • Cover and cook on low for 8 hours, or until the beef and vegetables are tender.
  • Remove the bay leaf before serving and adjust seasoning if needed.

Notes

You can serve this stew with warm bread or over rice for a complete meal. Adjust the thickness of the stew by adding more beef broth if needed.
