Instructions
Preparation Steps
Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and rinse with cold water.
In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and olives.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Garnish with fresh parsley before serving. Serve chilled or at room temperature.
Notes
For added flavor, consider adding a tablespoon of capers.
