  • 8 oz pasta rotini or bowtie
  • 12 oz shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper chopped
  • 0.5 cup red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 0.5 cup olives sliced
  • 1 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh parsley chopped

Instructions

Preparation Steps

  • Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and olives.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Garnish with fresh parsley before serving. Serve chilled or at room temperature.

Notes

For added flavor, consider adding a tablespoon of capers.
