  • 8 oz macaroni pasta uncooked
  • 1 lb shrimp peeled and deveined
  • 1 cup mayonnaise
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp salt
  • 1 tsp black pepper freshly ground
  • 0.5 cup celery chopped
  • 0.5 cup red bell pepper diced
  • 0.25 cup red onion finely chopped
  • 2 tbsp dill fresh, chopped

Instructions

Preparation Steps

  • Cook the macaroni pasta as per the package instructions. Drain and rinse under cold water.
  • In a large bowl, combine mayonnaise, lemon juice, salt, and pepper. Mix well.
  • Add the cooked and cooled macaroni, shrimp, celery, red bell pepper, and red onion to the bowl. Toss to combine.
  • Garnish with fresh dill before serving. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made a day ahead; the flavors will meld beautifully. Just give it a good stir before serving.
