  • 2 red bell peppers sliced
  • 2 green bell peppers sliced
  • 1 large onion sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 flour tortillas warmed
  • 0.25 cup cilantro chopped, for garnish
  • 1 unit lime cut into wedges, for serving

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Place chicken, bell peppers, and onion on a large baking sheet.
  • Drizzle with olive oil and sprinkle with chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  • Spread the mixture out in an even layer and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve the fajitas in warm tortillas and garnish with cilantro and lime wedges.
