  • 1 lb Italian sausage mild or hot, as preferred
  • 2 tbsp olive oil
  • 1 cup uncooked white rice such as Jasmine or Basmati
  • 2 cups chicken broth low sodium
  • 1 unit red bell pepper sliced
  • 1 unit green bell pepper sliced
  • 1 unit onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, about 5 minutes. Remove and set aside.
  • In the same skillet, add onion and cook until translucent, about 3 minutes. Stir in bell peppers and garlic; cook until veggies are tender.
  • Return sausage to the skillet along with uncooked rice, chicken broth, salt, pepper, oregano, and basil.
  • Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender.
  • Fluff the rice with a fork and serve hot.

Notes

Feel free to customize the vegetables or use brown rice for a healthier alternative. Adjust spices to taste.
