  • 14.75 oz canned salmon drained and flaked
  • 0.5 cup breadcrumbs preferably Panko
  • 0.25 cup mayonnaise
  • 2 eggs lightly beaten
  • 2 tbsp dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp green onions chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp old bay seasoning
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp olive oil

Instructions

Preparation Steps

  • In a large bowl, combine salmon, breadcrumbs, mayonnaise, eggs, dijon mustard, lemon juice, green onions, parsley, old bay seasoning, and black pepper. Mix until well combined.
  • Shape the mixture into 8 equal patties.
  • Heat olive oil in a large skillet over medium heat.
  • Place salmon patties in the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
  • Serve hot with your favorite sauce or a squeeze of lemon.

Notes

To make ahead, prepare the patties and refrigerate for up to a day before cooking. Serve with a side salad for a complete meal.
