  • 1.5 lbs pork tenderloin trimmed of silver skin
  • 2 lbs sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp paprika

Instructions

Preparation Steps

  • Preheat your oven to 425°F (220°C).
  • In a small bowl, mix together the salt, pepper, garlic powder, thyme, and paprika.
  • Rub the pork tenderloin with 1 tablespoon of olive oil and season with the spice mixture.
  • Place the sweet potatoes in a large baking dish and toss with the remaining 1 tablespoon of olive oil.
  • Put the pork tenderloin on top of the sweet potatoes in the baking dish.
  • Roast in the preheated oven for 30-35 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  • Remove the pork from the oven and let it rest for 5 minutes before slicing.
  • Serve the sliced pork with the roasted sweet potatoes.
