Instructions
Preparation Steps
Preheat your oven to 425°F (220°C).
In a small bowl, mix together the salt, pepper, garlic powder, thyme, and paprika.
Rub the pork tenderloin with 1 tablespoon of olive oil and season with the spice mixture.
Place the sweet potatoes in a large baking dish and toss with the remaining 1 tablespoon of olive oil.
Put the pork tenderloin on top of the sweet potatoes in the baking dish.
Roast in the preheated oven for 30-35 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
Remove the pork from the oven and let it rest for 5 minutes before slicing.
Serve the sliced pork with the roasted sweet potatoes.
