Instructions
Preparation Steps
Preheat the oven to 400°F (200°C).
In a large bowl, toss the asparagus and cherry tomatoes with olive oil, sea salt, and black pepper until evenly coated.
Spread the vegetables in a single layer on a baking sheet.
Roast in the preheated oven for 15-20 minutes, or until asparagus is tender and tomatoes are slightly caramelized.
Remove from the oven and drizzle with lemon juice. If using, sprinkle Parmesan cheese over the top before serving.
Notes
For a vegan version, omit the Parmesan cheese or use a plant-based alternative.
