  • 1 pint cherry tomatoes halved
  • 2 tbsp olive oil
  • 1 tsp sea salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp Parmesan cheese grated, optional

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the asparagus and cherry tomatoes with olive oil, sea salt, and black pepper until evenly coated.
  • Spread the vegetables in a single layer on a baking sheet.
  • Roast in the preheated oven for 15-20 minutes, or until asparagus is tender and tomatoes are slightly caramelized.
  • Remove from the oven and drizzle with lemon juice. If using, sprinkle Parmesan cheese over the top before serving.

Notes

For a vegan version, omit the Parmesan cheese or use a plant-based alternative.
