  • 5 pound ribeye roast bone-in
  • 3 tablespoon olive oil extra virgin
  • 2 tablespoon kosher salt coarse
  • 1.5 teaspoon black pepper freshly ground
  • 4 clove garlic minced
  • 2 teaspoon rosemary fresh, chopped
  • 1 teaspoon thyme fresh, chopped

Preparation Steps

  • Preheat the oven to 450°F (232°C).
  • Pat the ribeye roast dry with paper towels, ensuring all excess moisture is removed.
  • In a small bowl, mix together the olive oil, kosher salt, black pepper, garlic, rosemary, and thyme.
  • Rub the seasoning mixture evenly over the entire surface of the roast.
  • Place the roast on a rack in a roasting pan, fat side up.
  • Roast in the preheated oven for 15 minutes, then reduce the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 135°F (57°C) for medium rare.
  • Allow the ribeye roast to rest for 20 minutes before carving to allow juices to redistribute.

Notes

For a beautifully crusted exterior, make sure the roast is completely dry before applying the seasoning rub. Use a meat thermometer for best results when checking doneness.
