Easy Recipe for Delicious Garlic Parmesan Roasted Red Potatoes

Ingredients
 

  • Red potatoes: 2 pounds washed and cut into 1-inch pieces
  • Olive oil: 1/4 cup
  • Grated Parmesan cheese: 1/2 cup
  • Garlic: 3 cloves minced
  • Dried thyme: 1 teaspoon
  • Dried oregano: 1 teaspoon
  • Dried basil: 1 teaspoon
  • Salt: to taste
  • Black pepper: to taste
  • Fresh parsley: chopped for garnish (optional)

Instructions

Preheat the Oven:

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

Prepare the Potatoes:

  • In a large bowl, combine the cut red potatoes and olive oil. Toss until the potatoes are well coated.

Season:

  • Add the grated Parmesan cheese, minced garlic, dried thyme, dried oregano, dried basil, salt, and black pepper to the potatoes. Toss again until the potatoes are evenly coated with the seasonings and cheese.

Arrange on Baking Sheet:

  • Spread the potatoes out in a single layer on the prepared baking sheet, ensuring they are not overcrowded. This helps them roast evenly and get crispy.

Roast:

  • Place the baking sheet in the preheated oven and roast the potatoes for 25-30 minutes, or until they are golden brown and crispy on the outside. Halfway through the roasting time, use a spatula to turn the potatoes to ensure they brown evenly.

Serve:

  • Once roasted, remove the potatoes from the oven. Taste and adjust the seasoning with additional salt and pepper if needed. Garnish with chopped fresh parsley, if desired, before serving.
