  • 4 cups fresh raspberries You can use frozen raspberries as well, just thaw and drain them before use.
  • 1 cup granulated sugar Divided
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk Whole milk recommended.
  • 0.5 cup unsalted butter Melted
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, gently toss raspberries with 1/4 cup sugar and lemon juice. Set aside.
  • In a separate bowl, whisk together flour, remaining sugar, baking powder, and salt.
  • Slowly add milk, melted butter, and vanilla extract to the dry ingredients. Stir until smooth.
  • Pour batter into a greased 9x13 inch baking dish.
  • Spoon raspberries over the batter evenly.
  • Bake in preheated oven for 35 to 40 minutes or until golden brown.
  • Allow to cool slightly before serving. Best enjoyed warm.
