  • 2 lbs pork tenderloin trimmed
  • 2 tbsp olive oil extra virgin
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 1 cup chicken broth low sodium
  • 0.5 cup heavy cream
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp butter unsalted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme

Instructions

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • Rub pork tenderloins with olive oil, salt, and pepper.
  • In a large ovenproof skillet, heat the olive oil over medium-high heat and sear the pork on all sides until golden brown.
  • Transfer the skillet to the preheated oven and roast for 20-25 minutes until the pork reaches an internal temperature of 145°F.
  • Remove pork from the skillet and let it rest. Meanwhile, place the skillet on the stove over medium heat, and add butter, garlic powder, onion powder, and thyme.
  • Stir in chicken broth, scraping up any browned bits from the pan, and bring to a simmer.
  • Stir in heavy cream, and then add the cornstarch mixture to thicken the gravy.
  • Slice the pork and serve with the gravy poured over the top.

Notes

Ensure the pork is cooked to an internal temperature of 145°F for optimal doneness. Adjust salt and pepper to taste after making the gravy.
