Preparation Steps
Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook for 5-6 minutes until golden brown.
Add the chopped onion, bell pepper, garlic, and ginger to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
Stir in the pineapple chunks and soy sauce. Cook for an additional 2-3 minutes.
Mix the cornstarch slurry and add it to the pan. Stir well to combine and let the sauce thicken for about 2-3 minutes.
Season with salt and black pepper to taste. Garnish with chopped green onions and sesame seeds before serving.
