  • 1.5 lb chicken breast boneless, skinless, cut into 1-inch pieces
  • 1 cup pineapple chunks canned or fresh
  • 1 cup bell pepper red, chopped
  • 0.5 cup onion chopped
  • 2 tbsp soy sauce low-sodium
  • 2 tbsp olive oil
  • 2 tsp garlic minced
  • 0.5 tsp ginger freshly grated
  • 1 tbsp cornstarch mixed with 2 tablespoons water
  • 0.25 tsp black pepper
  • 0.25 tsp salt to taste
  • 2 tbsp green onions chopped for garnish
  • 0.5 tsp sesame seeds for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook for 5-6 minutes until golden brown.
  • Add the chopped onion, bell pepper, garlic, and ginger to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
  • Stir in the pineapple chunks and soy sauce. Cook for an additional 2-3 minutes.
  • Mix the cornstarch slurry and add it to the pan. Stir well to combine and let the sauce thicken for about 2-3 minutes.
  • Season with salt and black pepper to taste. Garnish with chopped green onions and sesame seeds before serving.

Notes

This dish pairs wonderfully with steamed rice or quinoa. Adjust the soy sauce and pineapple quantity based on your sweetness preference.
