  • 1 tbsp mayonnaise or more if desired

Preparation Steps

  • Peel the hard-boiled eggs and slice them in half lengthwise.
  • Remove the egg yolks and place them in a medium bowl. Set the egg whites aside.
  • Mash the yolks with a fork, then add pimento cheese and mayonnaise. Mix until smooth.
  • Spoon or pipe the yolk mixture back into the egg white halves.
  • Garnish with paprika and serve chilled.

Notes

For a spicier version, add a dash of hot sauce to the yolk mixture.
