  • 1.5 pounds shrimp peeled and deveined
  • 0.5 cup basil pesto store-bought or homemade
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 pinch red pepper flakes optional
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper freshly ground
  • 2 tablespoons lemon juice freshly squeezed
  • 0.25 cup Parmesan cheese grated
  • 2 tablespoons fresh basil chopped, for garnish

Instructions

Preparation Steps

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and red pepper flakes, and sauté for 1 minute until fragrant.
  • Add the shrimp to the skillet and season with salt and black pepper.
  • Cook the shrimp for 3-4 minutes on each side until pink and fully cooked.
  • Lower the heat and stir in the basil pesto and lemon juice, tossing to coat the shrimp evenly.
  • Remove from heat and sprinkle with grated Parmesan cheese and chopped fresh basil before serving.

Notes

To make your own pesto, blend fresh basil, pine nuts, Parmesan cheese, garlic, and olive oil. Serve over pasta or with a side of crusty bread.
