  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cups creamy peanut butter
  • 0.25 cups unsalted butter melted
  • 2 large ripe bananas mashed
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cups milk

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  • In another bowl, mix together the peanut butter, melted butter, mashed bananas, egg, vanilla extract, and milk until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Divide the batter evenly among the muffin cups.
  • Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store the muffins in an airtight container at room temperature for up to 3 days. You can also freeze them for later enjoyment.
