  • 29 oz canned peaches, drained and chopped
  • 2 cup mini marshmallows
  • 0.5 cup sweetened shredded coconut optional but tasty
  • 0.5 cup chopped pecans toasted, optional
  • 1 tsp vanilla extract optional

Instructions

Preparation Steps

  • Drain the peaches well, pat dry, and chop into bite-size pieces.
  • Stir the cottage cheese with the peach gelatin until evenly tinted and combined.
  • Fold in the thawed whipped topping until the mixture looks light and fluffy.
  • Gently fold in peaches, mini marshmallows, coconut, pecans, and vanilla until just mixed.
  • Cover and chill at least 1 hour before serving. Give a quick stir and spoon into bowls.

Notes

Variation: Swap pecans for chopped pistachios or omit nuts for a nut-free version. For a fresher twist, fold in a handful of sliced strawberries. Storage: Keep refrigerated, covered, for up to 2 days; stir before serving.
