Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large bowl, combine sliced peaches, 1/4 cup of granulated sugar, brown sugar, lemon juice, and vanilla extract. Stir gently to coat the peaches.
In a separate bowl, whisk together flour, remaining 3/4 cup of granulated sugar, baking powder, and salt.
Add milk to the flour mixture and stir until no lumps remain. Pour in the melted butter and mix until well combined.
Pour the batter into a greased 9x13-inch baking dish. Spoon the peach mixture evenly on top of the batter. Do not stir.
Sprinkle ground cinnamon evenly over the top of the peaches.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
Let the cobbler cool for a few minutes before serving. You can serve it warm with a scoop of vanilla ice cream if desired.
Notes
This peach cobbler is best enjoyed fresh but can be stored in the refrigerator for up to two days. Reheat in the oven for the best texture.
