  • 2 cups mashed sweet potatoes about 2 large sweet potatoes
  • 1 cup almond flour
  • 0.5 cup coconut flour
  • 0.25 cup maple syrup or honey for a different flavor
  • 0.25 cup coconut oil melted
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 large eggs room temperature

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  • In a large bowl, combine the mashed sweet potatoes, almond flour, coconut flour, maple syrup, and melted coconut oil. Mix well.
  • Add the cinnamon, nutmeg, vanilla extract, baking soda, salt, and eggs. Stir until fully combined.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool completely before cutting into bars. Serve and enjoy!
