Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
In a medium bowl, combine shredded chicken, cumin, chili powder, salt, and pepper.
Place four tortillas on a lined baking sheet. Spread some chicken mixture over each tortilla, and sprinkle with cheese.
Top with remaining tortillas. Lightly brush the tops with melted butter.
Bake in preheated oven for about 15-20 minutes, or until cheese is melted and tortillas are golden brown and crisp.
Remove from oven and slice each quesadilla into wedges. Serve with salsa, sour cream, and garnish with chopped cilantro.
Notes
Feel free to add additional fillings such as sautéed bell peppers or onions for extra flavor.
