  • 1.5 pounds chicken thighs bone-in, skin-on
  • 1 cup long grain white rice
  • 2 cups chicken broth low sodium
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine rice, chicken broth, salt, and pepper. Stir well to mix.
  • Heat olive oil in a pan over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 5 minutes.
  • Place the seared chicken thighs skin-side up on top of the rice mixture.
  • Sprinkle garlic powder over the top and cover the baking dish tightly with foil.
  • Bake in the preheated oven for 50 minutes, until the rice is tender and the chicken is cooked through.
  • Remove foil and bake for an additional 10 minutes to crisp up the skin.
  • Serve hot and enjoy your meal.

Notes

For extra flavor, try adding a teaspoon of smoked paprika to the rice mixture. You can also garnish with chopped fresh parsley before serving.
