Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large baking dish, combine rice, chicken broth, salt, and pepper. Stir well to mix.
Heat olive oil in a pan over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 5 minutes.
Place the seared chicken thighs skin-side up on top of the rice mixture.
Sprinkle garlic powder over the top and cover the baking dish tightly with foil.
Bake in the preheated oven for 50 minutes, until the rice is tender and the chicken is cooked through.
Remove foil and bake for an additional 10 minutes to crisp up the skin.
Serve hot and enjoy your meal.
Notes
For extra flavor, try adding a teaspoon of smoked paprika to the rice mixture. You can also garnish with chopped fresh parsley before serving.
