  • 1 lb ground chicken
  • 0.5 cup breadcrumbs preferably panko
  • 1 egg beaten
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 0.25 cup green onions chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup orange juice freshly squeezed
  • 2 tbsp soy sauce low sodium
  • 2 tbsp honey
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1 tbsp vegetable oil for cooking

Instructions

Preparation Steps

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine ground chicken, breadcrumbs, beaten egg, minced garlic, grated ginger, chopped green onions, salt, and black pepper. Mix until well combined.
  • Form the mixture into 1 1/2 inch meatballs and place evenly spaced on the prepared baking sheet.
  • Bake in the preheated oven for 15-18 minutes, or until cooked through.
  • While meatballs are baking, heat vegetable oil in a saucepan over medium heat. Add orange juice, soy sauce, and honey, and bring to a simmer.
  • Stir in the cornstarch mixture and continue to stir until the sauce thickens. Remove from heat.
  • Toss cooked meatballs with the sauce and serve garnished with additional green onions, if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the sauce.
