  • 3 cups yellow onions thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 0.5 teaspoon sugar optional, to caramelize onions
  • 4 cups beef broth or use vegetable broth for vegetarian version
  • 1 cup white wine or use more broth instead
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground
  • 1 teaspoon thyme dried
  • 4 slices baguette toasted
  • 1 cup gruyere cheese grated

Instructions

Preparation Steps

  • In a large pot, melt the butter with the olive oil over medium heat. Add the onions and cook slowly, stirring occasionally, until they’re softened.
  • Sprinkle sugar to aid in caramelization and continue to cook until onions turn golden brown and caramelized, about 30 minutes.
  • Add the broth, wine, salt, pepper, and thyme. Simmer for another 15 minutes.
  • Preheat the broiler. Ladle the soup into oven-safe bowls. Place a baguette slice on top of each bowl and scatter grated cheese over the top.
  • Place under the broiler until the cheese is bubbly and golden, about 2-3 minutes.

Notes

This soup can be stored in the refrigerator for up to 3 days. Reheat gently over medium heat.
