Instructions
Preparation Steps
In a large pot, melt the butter with the olive oil over medium heat. Add the onions and cook slowly, stirring occasionally, until they’re softened.
Sprinkle sugar to aid in caramelization and continue to cook until onions turn golden brown and caramelized, about 30 minutes.
Add the broth, wine, salt, pepper, and thyme. Simmer for another 15 minutes.
Preheat the broiler. Ladle the soup into oven-safe bowls. Place a baguette slice on top of each bowl and scatter grated cheese over the top.
Place under the broiler until the cheese is bubbly and golden, about 2-3 minutes.
Notes
This soup can be stored in the refrigerator for up to 3 days. Reheat gently over medium heat.
