  • 1.5 pounds chicken thighs skin-on, bone-in
  • 1 cup long grain rice
  • 2 tablespoons olive oil
  • 1 lemon juice and zest
  • 2 cups chicken broth low sodium
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat.
  • Season chicken thighs with salt and pepper, then brown them in the pot for about 5 minutes on each side.
  • Remove chicken and set aside. Add rice, chicken broth, lemon juice, zest, and oregano to the pot, stirring to combine.
  • Return chicken to the pot, skin side up, and bring to boil.
  • Reduce heat to low, cover, and simmer for 25 minutes until rice is cooked.
  • Remove from heat and let it rest for 5 minutes before serving.

Notes

Serve with a side of Greek salad for a complete meal.
