Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat.
Season chicken thighs with salt and pepper, then brown them in the pot for about 5 minutes on each side.
Remove chicken and set aside. Add rice, chicken broth, lemon juice, zest, and oregano to the pot, stirring to combine.
Return chicken to the pot, skin side up, and bring to boil.
Reduce heat to low, cover, and simmer for 25 minutes until rice is cooked.
Remove from heat and let it rest for 5 minutes before serving.
Notes
Serve with a side of Greek salad for a complete meal.
