Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add diced chicken breast, and cook until browned, about 5-7 minutes.
Add broccoli florets and cook for another 2 minutes, stirring occasionally.
Stir in white rice, chicken broth, garlic powder, onion powder, salt, and black pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and liquid is absorbed.
Remove from heat and stir in shredded cheddar cheese until melted and creamy. Serve warm.
Notes
For added flavor, serve with a sprinkle of fresh chopped parsley or red pepper flakes if you like some heat. Enjoy with your favorite side salad.
