  • 1 tbsp olive oil extra virgin
  • 1 lb chicken breast diced
  • 2 cups broccoli florets fresh or frozen
  • 1 cup white rice uncooked
  • 2 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add diced chicken breast, and cook until browned, about 5-7 minutes.
  • Add broccoli florets and cook for another 2 minutes, stirring occasionally.
  • Stir in white rice, chicken broth, garlic powder, onion powder, salt, and black pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and liquid is absorbed.
  • Remove from heat and stir in shredded cheddar cheese until melted and creamy. Serve warm.

Notes

For added flavor, serve with a sprinkle of fresh chopped parsley or red pepper flakes if you like some heat. Enjoy with your favorite side salad.
