  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 cup teriyaki sauce store-bought or homemade
  • 1 teaspoon minced garlic about 2 cloves
  • 1 teaspoon minced ginger fresh
  • 2 cups broccoli florets fresh or frozen
  • 1 cup bell pepper sliced, any color
  • 0.5 cup sliced carrots
  • 2 tablespoons sesame seeds for garnish
  • 4 cups cooked rice for serving

Instructions

Preparation Steps

  • Heat vegetable oil in a large pan over medium-high heat.
  • Add chicken pieces to the pan and cook until browned and no longer pink, about 5 minutes.
  • Stir in garlic and ginger, cooking until fragrant, about 1 minute.
  • Add broccoli, bell pepper, and carrots to the pan.
  • Pour teriyaki sauce over the chicken and vegetables. Stir well to coat and simmer for 3-5 minutes until sauce thickens.
  • Garnish with sesame seeds and serve over cooked rice.

Notes

For added flavor, marinate chicken in teriyaki sauce for 30 minutes before cooking. Adjust vegetable types and quantities to suit your taste.
