  • 1 pound ground beef 85% lean
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons taco seasoning store-bought or homemade
  • 2.5 cups beef broth
  • 1 can diced tomatoes 14 oz, undrained
  • 8 ounces pasta such as rotini or shells
  • 1 cup cheddar cheese shredded
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
  • 2 tablespoons fresh cilantro chopped, for garnish

Instructions

Preparation Steps

  • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3 minutes.
  • Stir in the taco seasoning until the beef mixture is well coated.
  • Pour in the beef broth and undrained diced tomatoes. Bring to a simmer.
  • Add the pasta and stir well. Cover the skillet and cook for 10-12 minutes, until the pasta is tender.
  • Remove the skillet from heat and sprinkle with shredded cheddar cheese. Cover for 1-2 minutes to allow cheese to melt.
  • Season with salt and pepper to taste. Garnish with chopped cilantro and serve.
