  • 2 tablespoons olive oil
  • 1 cup onion chopped
  • 1 cup carrot shredded
  • 1 cup celery chopped
  • 3 cloves garlic minced
  • 1 pound chicken breasts cooked and shredded
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 1 package potato gnocchi (16 oz)
  • 1 teaspoon thyme dried
  • 2 cups spinach fresh
  • to taste salt
  • to taste black pepper
  • 1 tablespoon parmesan cheese grated, for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion, celery, and carrot; sauté until tender, about 5 minutes.
  • Stir in garlic and cook for another minute until fragrant.
  • Add cooked, shredded chicken to the pot.
  • Pour in chicken broth and bring the mixture to a boil.
  • Stir in half-and-half, thyme, and gnocchi. Let simmer on low heat until the gnocchi starts to float and is cooked through, about 4 minutes.
  • Stir in spinach and let simmer until wilted.
  • Season with salt and black pepper to taste.
  • Serve hot, garnished with parmesan cheese.

Notes

For a richer flavor, consider adding 1/2 cup of heavy cream in addition to the half-and-half.
