  • 2 pounds yellow squash sliced
  • 0.5 cup chopped onion
  • 1 can cream of mushroom soup 10.5 ounces can
  • 1 cup sour cream
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1.5 cups shredded cheddar cheese divided
  • 1 cup crushed Ritz crackers
  • 2 tablespoons butter melted

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large pot, bring water to boil and add the sliced squash and chopped onion. Cook until tender, about 10 minutes. Drain well.
  • In a large bowl, combine the cooked squash and onions with cream of mushroom soup, sour cream, salt, pepper, and 1 cup of cheddar cheese. Mix well.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • In a small bowl, combine crushed crackers and melted butter. Sprinkle evenly over the squash mixture.
  • Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  • Bake in the preheated oven for 25 to 30 minutes, until the topping is golden brown and the casserole is bubbly. Let cool for a few minutes before serving.

Notes

For added flavor, you can mix in some bacon bits or top with fried onions before baking.
