A creamy and comforting squash casserole that's a perfect side dish for any meal. This easy recipe uses fresh yellow squash and a delicious cheesy topping.
In a large pot, bring water to boil and add the sliced squash and chopped onion. Cook until tender, about 10 minutes. Drain well.
In a large bowl, combine the cooked squash and onions with cream of mushroom soup, sour cream, salt, pepper, and 1 cup of cheddar cheese. Mix well.
Transfer the mixture to a greased 9x13 inch baking dish.
In a small bowl, combine crushed crackers and melted butter. Sprinkle evenly over the squash mixture.
Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Bake in the preheated oven for 25 to 30 minutes, until the topping is golden brown and the casserole is bubbly. Let cool for a few minutes before serving.
