Preparation Steps
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the peanut butter, brown sugar, and granulated sugar until smooth.
Mix in the eggs and vanilla extract until well blended.
Add the oats and baking soda to the wet ingredients and mix until combined.
Stir in the chocolate chips, candy-coated chocolate pieces, and walnuts (if using).
Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, until the edges are lightly browned.
Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For an extra flair, try adding 1/2 cup of shredded coconut or raisins to the mix.
