  • 1.5 cups white rice preferably basmati
  • 2 tablespoons olive oil extra virgin
  • 1 cup mushrooms sliced, white or cremini
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 3 cups vegetable broth or water
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground
  • 2 tablespoons parsley fresh, chopped

Instructions

Preparation Steps

  • Rinse the rice under cold water until the water runs clear. Drain and set aside.
  • In a large saucepan, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  • Add the mushrooms and cook until they are lightly browned, about 5 minutes.
  • Stir in the rice and cook for an additional 2 minutes, ensuring all grains are coated in oil.
  • Add the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat to low, covering with a lid.
  • Simmer for 15-18 minutes or until the rice is tender and all the liquid has been absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with chopped parsley before serving.

Notes

Feel free to add more vegetables like peas or bell peppers for added flavor and nutrition. Adjust seasoning to your preference.
