Instructions
Preparation Steps
Rinse the rice under cold water until the water runs clear. Drain and set aside.
In a large saucepan, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
Add the mushrooms and cook until they are lightly browned, about 5 minutes.
Stir in the rice and cook for an additional 2 minutes, ensuring all grains are coated in oil.
Add the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat to low, covering with a lid.
Simmer for 15-18 minutes or until the rice is tender and all the liquid has been absorbed.
Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with chopped parsley before serving.
Notes
Feel free to add more vegetables like peas or bell peppers for added flavor and nutrition. Adjust seasoning to your preference.
