  • 1.5 lb mushrooms sliced
  • 1 cup cooked rice basmati or long grain
  • 1 cup shredded cheddar cheese sharp
  • 1 can cream of mushroom soup 10.5 oz can
  • 0.5 cup sour cream
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground
  • 0.25 cup chopped parsley for garnish

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat and sauté the sliced mushrooms until golden brown, about 5-7 minutes.
  • In a large mixing bowl, combine cooked mushrooms, rice, shredded cheddar cheese, cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix well.
  • Transfer the mixture into a greased 9x13 inch baking dish. Spread evenly.
  • Bake in the preheated oven for 30 minutes or until the casserole is bubbly and heated through.
  • Remove from oven and let it cool for a few minutes before serving. Garnish with chopped parsley.
