Line an 8x8-inch square baking dish with parchment paper, leaving an overhang on the sides for easy removal.
In a medium saucepan over low heat, combine the sweetened condensed milk and white chocolate chips, stirring constantly until the mixture is smooth and melted.
Remove from heat and stir in the peppermint extract and green food coloring until well blended.
Fold in the chopped Oreo cookies, reserving a few pieces for garnishing on top.
Pour the fudge mixture into the prepared baking dish and smooth the top. Sprinkle the reserved Oreo pieces on top.
Refrigerate for at least 2 hours or until set. Once set, lift the fudge out of the pan using the parchment overhang and cut it into squares.
