  • 4 medium bell peppers any color variety
  • 1 pound ground beef lean
  • 1 cup cooked rice white or brown
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons fresh cilantro chopped, for garnish

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds. Arrange in a baking dish.
  • Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft.
  • Add ground beef to the skillet and cook until browned. Drain excess fat.
  • Stir in cooked rice, diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for 5 minutes.
  • Fill each pepper with the beef mixture and top with shredded cheese.
  • Bake in the preheated oven for 30 minutes, or until peppers are tender.
  • Garnish with fresh cilantro before serving.

Notes

You can prepare these stuffed peppers ahead of time and bake just before serving.
