Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
Add ground beef to the skillet, cook until browned. Drain excess fat if necessary.
Stir in taco seasoning, salsa, black beans, and corn. Simmer for 5 minutes.
In a greased 9x13 inch baking dish, layer 3 corn tortillas, half the meat mixture, and 1 cup of cheese. Repeat layers once more.
Top with remaining tortillas, spread sour cream over tortillas, and sprinkle with remaining cheese.
Bake uncovered for 25-30 minutes, until cheese is melted and bubbly. Garnish with cilantro before serving.
