  • 2 cups coconut milk unsweetened
  • 0.5 cups chia seeds
  • 2 tablespoons honey or maple syrup
  • 0.5 teaspoons vanilla extract
  • 0.25 teaspoons salt optional
  • 1 pieces fresh mango diced, for topping

Instructions

Preparation Steps

  • In a large mixing bowl, combine the mango puree, coconut milk, chia seeds, honey, vanilla extract, and salt if using. Stir well until all ingredients are combined.
  • Allow the mixture to sit for 5 minutes, then stir again to ensure the chia seeds are evenly distributed.
  • Cover the bowl and refrigerate for at least 2 hours or until the pudding has set and thickened.
  • Before serving, stir the pudding to redistribute the chia seeds. Divide into serving bowls and top with fresh diced mango.

Notes

This pudding can be prepared the night before for a ready-to-go breakfast in the morning.
