In a large mixing bowl, combine the mango puree, coconut milk, chia seeds, honey, vanilla extract, and salt if using. Stir well until all ingredients are combined.
Allow the mixture to sit for 5 minutes, then stir again to ensure the chia seeds are evenly distributed.
Cover the bowl and refrigerate for at least 2 hours or until the pudding has set and thickened.
Before serving, stir the pudding to redistribute the chia seeds. Divide into serving bowls and top with fresh diced mango.
