  • 4 lb russet potatoes peeled and cubed
  • 0.5 cup sour cream
  • 0.5 cup milk
  • 4 tablespoons butter softened
  • 1.5 cups shredded cheddar cheese divided
  • 8 slices bacon cooked and crumbled
  • 0.25 cup green onions sliced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat to medium and simmer for about 15 minutes or until the potatoes are tender.
  • Drain the potatoes and return them to the pot. Add the sour cream, milk, butter, salt, and black pepper. Mash until smooth and creamy.
  • Stir in 1 cup of cheddar cheese, half of the bacon, and half of the green onions.
  • Transfer the mashed potato mixture to a greased 9x13 inch baking dish. Top with the remaining cheddar cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Garnish with remaining bacon and green onions before serving.

Notes

For a spicier version, add some diced jalapeños or a sprinkle of cayenne pepper to the mixture.
