This loaded mashed potato casserole is a perfect comfort food, combining creamy mashed potatoes with melted cheese, crispy bacon, and fresh herbs for a deliciously satisfying dish.
Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat to medium and simmer for about 15 minutes or until the potatoes are tender.
Drain the potatoes and return them to the pot. Add the sour cream, milk, butter, salt, and black pepper. Mash until smooth and creamy.
Stir in 1 cup of cheddar cheese, half of the bacon, and half of the green onions.
Transfer the mashed potato mixture to a greased 9x13 inch baking dish. Top with the remaining cheddar cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Garnish with remaining bacon and green onions before serving.
