Firm the fruit: Place the lemons in the freezer for 10 minutes to slightly tighten the skin for cleaner zest. Rinse and dry thoroughly.
Set up: Lay a sheet of parchment on your counter to catch zest. Use a microplane or fine rasp grater; if using a vegetable peeler, keep a sharp knife ready to mince the strips.
Zest lightly: Hold the lemon at a 45° angle and sweep it across the grater using light pressure, rotating the fruit so you remove only the yellow skin, not the bitter white pith. If using a peeler, shave thin yellow strips and finely mince them.
Bloom the aroma: Transfer the zest to the parchment. Sprinkle the sugar and salt over it and gently rub together for 10 seconds. Let stand 2 minutes to draw out essential oils.
Optional quick-dry: Warm a small dry skillet over low heat. Add the seasoned zest and stir for 30–60 seconds—just until you see a wisp of steam. Immediately spread on a cool plate.
Use or store: Spoon the fluffy zest over pasta, grilled fish, berries, or baked goods. Once cool, refrigerate in an airtight jar up to 3 days, or freeze up to 1 month.
