  • 1.5 cups all-purpose flour sifted
  • 0.75 cups unsalted butter melted
  • 0.5 cups pecans chopped
  • 1 cups powdered sugar
  • 8 oz cream cheese softened
  • 1 package instant lemon pudding mix 3.4 oz size
  • 3 cups milk cold
  • 1 container whipped topping 8 oz, thawed
  • 0.5 tsp vanilla extract

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, mix together the flour, melted butter, and chopped pecans until evenly combined.
  • Press the mixture into the bottom of a 9x13-inch baking dish.
  • Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and let it cool.
  • In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture over the cooled crust.
  • In another bowl, whisk together the lemon pudding mix and cold milk until thickened and smooth. Spread over the cream cheese layer.
  • Top with the whipped topping and spread it evenly.
  • Refrigerate for at least 2 hours before serving to let the layers set.

Notes

For an extra lemony kick, grate some lemon zest on top before serving.
