Ingredients
 

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • Zest of 2 lemons

For the Cream Cheese Filling:

  • 8 ounces cream cheese softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon all-purpose flour
  • Juice of 1 lemon

For the Streusel Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter chilled

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  • In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Begin and end with the dry ingredients. Mix until just combined. Fold in the lemon zest.
  • In a separate bowl, prepare the cream cheese filling by beating together the softened cream cheese, sugar, egg, flour, and lemon juice until smooth.
  • Spread half of the cake batter into the prepared baking pan. Dollop the cream cheese filling over the batter, then spread the remaining batter over the cream cheese layer.
  • For the streusel topping, combine flour, sugar, and chilled butter in a bowl. Use your fingers or a pastry cutter to create a crumbly texture. Sprinkle the streusel over the cake batter.
  • Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • While the cake is cooling, prepare the glaze by whisking together powdered sugar and fresh lemon juice until smooth.
  • Drizzle the glaze over the cooled Lemon Cream Cheese Coffee Cake.
