Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
In the same skillet, add remaining tablespoon of olive oil and minced garlic. Sauté until fragrant, about 1 minute.
