  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 0.25 cup granulated sugar
  • 2 cups granulated sugar for the filling
  • 0.25 cup all-purpose flour for the filling
  • 4 large eggs
  • 0.5 cup freshly squeezed lemon juice about 2-3 lemons
  • 1 tablespoon lemon zest optional, for garnish
  • 1 tablespoon powdered sugar for dusting, optional

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a medium bowl, blend together 1.5 cups flour, softened butter, and 0.25 cup sugar. Press into the bottom of the prepared pan.
  • Bake the crust for 15-20 minutes in the preheated oven, or until firm and golden.
  • In another bowl, whisk together 2 cups sugar, 0.25 cup flour, eggs, and lemon juice. Pour over the baked crust.
  • Return to the oven and bake for an additional 20-25 minutes. Bars will firm up as they cool.
  • Once cooled, sprinkle with lemon zest and powdered sugar if desired.

Notes

Make sure to use fresh lemons for the best flavor. Allow bars to cool completely before cutting.
