Instructions
Preparation Steps
Heat olive oil in a large pot over medium-high heat.
Add lamb and cook until browned, about 5 minutes.
Stir in onions and garlic, and cook until onions are translucent.
Pour in beef broth and bring to a simmer.
Add carrots and potatoes. Cover and let simmer on low heat for 1.5 hours.
Season with salt and pepper to taste before serving.
Notes
For a thicker stew, you can add a tablespoon of flour before simmering.
