  • 2 pounds lamb shoulder cut into chunks
  • 2 tablespoons olive oil
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 2 teaspoons salt or to taste
  • 1 teaspoon pepper

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium-high heat.
  • Add lamb and cook until browned, about 5 minutes.
  • Stir in onions and garlic, and cook until onions are translucent.
  • Pour in beef broth and bring to a simmer.
  • Add carrots and potatoes. Cover and let simmer on low heat for 1.5 hours.
  • Season with salt and pepper to taste before serving.

Notes

For a thicker stew, you can add a tablespoon of flour before simmering.
