  • 1.5 cups almond flour finely ground
  • 0.75 cup unsweetened cocoa powder
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup erythritol or another keto-friendly sweetener
  • 3 large eggs room temperature
  • 0.5 cup butter melted
  • 1 teaspoon vanilla extract
  • 0.5 cup sugar-free dark chocolate chips (optional)

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
  • In a large bowl, beat the eggs and erythritol together until smooth, then add the melted butter and vanilla extract.
  • Slowly add the dry ingredients to the wet ingredients, mixing until well combined. Fold in the chocolate chips, if using.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the brownies cool in the pan for 15 minutes before removing and slicing.

Store in an airtight container for up to one week, or freeze for longer storage.
