  • 3 lbs Beef roast chuck or rump roast
  • 1 tablespoon Olive oil extra virgin
  • 2 cups Beef broth
  • 1 packet Italian seasoning mix
  • 0.5 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper freshly ground
  • 1 cup Pepperoncini peppers with juice
  • 4 cloves Garlic minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Dried thyme

Instructions

Preparation Steps

  • Preheat your slow cooker on low heat.
  • Season the beef roast with salt and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Brown the roast on all sides.
  • Place the roast in the slow cooker. Add beef broth, Italian seasoning, pepperoncini peppers, garlic, oregano, and thyme.
  • Cover and cook on low for 6-8 hours or until the beef is tender and can be easily shredded.
  • Shred the beef with two forks and mix into the juices. Serve with your choice of sides.
