Instructions
Preparation Steps
In a saucepan, whisk together the sugar, lemon juice, lemon zest, and eggs until smooth.
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove from heat and stir in the butter until melted and smooth.
Pour the lemon curd into a clean jar and let it cool to room temperature before refrigerating.
Notes
Store in the refrigerator for up to two weeks. Perfect for spreading on toast, using in desserts, or adding to yogurt.
