  • 0.5 cup heavy cream at room temperature
  • 2 tablespoons unsalted butter cut into pieces
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt optional, for salted caramel

Preparation Steps

  • In a medium saucepan over medium heat, combine the sugar and water. Stir until the sugar is completely dissolved.
  • Once the sugar has dissolved, increase the heat to medium-high and bring the mixture to a boil without stirring. Allow it to boil until it reaches a deep amber color, about 6-8 minutes.
  • Remove from heat and carefully add the heavy cream while whisking continuously. The mixture will bubble up, so be cautious.
  • Stir in the butter and vanilla extract until the mixture is smooth.
  • Add salt if making salted caramel. Allow the caramel to cool before transferring to a jar. Store in the refrigerator for up to two weeks.
