  • 1.5 cups creamy peanut butter preferably unsalted
  • 0.5 cup butter softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar sifted
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening for smoother chocolate

Instructions

Preparation Steps

  • In a large bowl, mix the peanut butter, butter, vanilla extract, and powdered sugar until well combined and smooth.
  • Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Chill the peanut butter balls in the refrigerator for at least 30 minutes to firm up.
  • Melt the chocolate chips and vegetable shortening in a double boiler or in a microwave-safe bowl in the microwave, stirring until smooth.
  • Dip the chilled peanut butter balls into the melted chocolate, leaving a small portion of peanut butter visible at the top.
  • Place the buckeyes back on the parchment paper and refrigerate until the chocolate is set.

Notes

For easier dipping, use a toothpick or fork. Store buckeyes in an airtight container in the refrigerator for up to two weeks.
